About this scrapbook page: |
This was a fond memory of a field trip from school in my youth where Brockle is bound with mushy peas in big vats. Ballyvarna is around 10,000 ft up in the Kerry Mountains and provides the perfect environment for growing brockles. The Poitin is gravity fed from the stills higher up in the mountains and is ice cold. This was long before Coors! Never accept anything but Kerry brockle tart - anything else is a fake!
